Sea purslane, also known as marsh samphire, is a succulent halophyte commonly found along coastlines where saltwater reaches. In Thailand, it is abundant in the provinces of Samut Sakhon and Samut Songkhram. Sea purslane has bluish-green leaves with a salty taste and produces flowers in leaf axils. It serves as an indicator of soil salinity, with plants in saline soil exhibiting reddish-purple leaves, while those in freshwater environments have blue leaves. In coastal provinces of Thailand, young shoots are used in coconut milk curries. Before consumption, the leaves must be cooked by boiling and squeezing out the salty water. The Mon people use sea purslane leaves in various dishes. The leaves are also used in other culinary preparations, while the roots are employed as a bone tonic and antidote for abscesses.
