This is the 18th World Gourmet Festival, which will bring together top Michelin-starred and renowned chefs from around the world. The festival will feature exquisite menus, fine food and wine, and will be held from Monday, September 4th to Sunday, September 10th, 2017. Let's talk to the event organizers about the previous event.


This year, Anantara Siam Bangkok Hotel, in collaboration with San Pellegrino, has invited more than 10 Michelin-starred and internationally acclaimed chefs from 8 countries around the world to prepare exquisite dishes for a week-long culinary extravaganza. Let's meet the talented chefs who will be showcasing their culinary prowess.

1. Chef Guillaume Galliot, 2-Michelin Starred Chef from CAPRICE Restaurant, Hong Kong.

Chef Guillaume Galliot: A Culinary Journey from France to Hong Kong

Chef Guillaume Galliot, born in France's Loire Valley, embarked on a global culinary journey to hone his craft. He began his culinary education under Michelin-starred twin chefs Jacques and Laurent Pourcel at the 3-star restaurant Jardin des Sens. Galliot's experience spans across continents, from New York and St. Barthélemy to Singapore and Beijing. At the young age of 23, he became the youngest sous chef at the Raffles Hotel Singapore.

Galliot breathed new life into modern French cuisine at The Tasting Room Macau, earning a Michelin star within its first year of operation. He maintained the star for four consecutive years before achieving a 2-star rating in 2016 and 2017. Currently, Chef Galliot leads the team at CAPRICE, a 2-Michelin-starred restaurant at the Four Seasons Hotel Hong Kong. Since joining in April 2017, he has brought his globally-influenced vision of French cuisine to one of Asia's most acclaimed dining destinations.

2. Chef Shinichiro Takagi, 2-Michelin Starred Chef from ZENIYA Restaurant, Japan

Chef Shinichiro Takagi, who has dedicated his life to his family's restaurant ZENIYA, has transformed it from a small local eatery into a 2-star Michelin restaurant. Born in Kanazawa in 1970, Chef Takagi earned a bachelor's degree in commercial science before embarking on his culinary journey at Kyoto Kitcho, one of Japan's most renowned kaiseki restaurants. With a deep understanding of Japanese culinary art and philosophy, Chef Takagi has served as a guest chef at prestigious international hotels and events, from Germany to the United States. Committed to promoting KAGA cuisine globally, he has cooked for renowned chefs at the WORLD GOURMET SUMMIT in Singapore and lectured on cultural heritage for UNESCO and other international organizations. In December 2016, his restaurant Zeniya was recognized as one of the world's 1,000 best restaurants by LA LISTE, and in February 2017, Chef Takagi was appointed as a Goodwill Ambassador for Japanese Cuisine by the Ministry of Agriculture, Forestry and Fisheries of Japan.

3. Chef Hiroaki Ishizuka (1-Michelin Star) from KIEN Restaurant, Japan.

Chef Hiroaki Ishizuk: A Culinary Journey from Niigata to Michelin-Starred Success

Chef Hiroaki Ishizuk, born in 1973 in Niigata Prefecture on the northwestern coast of Japan's Honshu Island, embarked on his culinary journey at the young age of 18. Leaving his hometown for the bustling capital of Tokyo, he honed his skills at the renowned Zakuro restaurant for a decade. This formative experience laid the foundation for his future success.

Ishizuk's talent and dedication propelled him to Michelin-starred establishments. He first joined the one-Michelin-starred Sakuragawa, followed by a stint at the two-Michelin-starred Waketokuyama. In 2008, he assumed the role of Executive Chef at Kien in Akasaka, a restaurant that earned its first Michelin star in 2010. Under Ishizuk's leadership, Kien maintained its prestigious one-star rating for an impressive seven consecutive years.

The name "Kien," meaning "returning swallow" in Japanese, reflects the chef and owner's aspiration to create a dining experience that leaves a lasting impression, enticing guests to return time and again. Ishizuk's culinary artistry and unwavering commitment to excellence have undoubtedly contributed to Kien's enduring success.

4. **Chef Cristina Bowerman (1-Michelin Star) from GLASS HOSTARIA, Italy**

Chef Cristina Bowerman: A Culinary Trailblazer

Cristina Bowerman, the sole female chef at the 18th World Gourmet Festival, hails from Italy. Amidst a culinary landscape dominated by men, she stands as an inspiration. Her passion for travel and thirst for knowledge led her to the United States in 1992, where she pursued culinary arts, adding to her existing law degree. While respecting traditional Italian cuisine, Bowerman's dishes incorporate diverse flavors, ranging from Texan to Puerto Rican, gleaned from her mentors in the US.

Returning to Italy in 2004, she served as head chef for several restaurants, culminating in international recognition for her role at GLASS HOSTARIA. Bowerman's accolades continued, including a Michelin star in 2010 for her innovative cuisine, making her one of the few female chefs to achieve this distinction.

Beyond the kitchen, she authored an autobiography, spoke at TEDxMilano Women, and received numerous international awards.   1. Chef Miguel Laffan, 1-Michelin Star from L'AND Vineyards Restaurant, Portugal

Portuguese chef Miguel Laffan, who has been passionate about the science and art of food since a young age, has developed his culinary skills throughout his travels abroad. He has worked in various Michelin-starred restaurants, including Fortaleza do Guincho and Le Clous de la Violette in France, before venturing to Brazil and Spain. He then led the chef team at a boutique hotel in Funchal, Madeira, before settling down at a restaurant in Alentejo, which is now his home. International influences have diversified his cooking and helped him earn a Michelin star at the luxury resort L'AND Vineyards. Chef Laffan is one of the new wave of chefs who are making a mark on modern Portuguese cuisine, creating a variety of dishes using fresh, local ingredients. This modern Mediterranean restaurant is nestled amidst the beautiful nature of Alentejo. Each dish takes diners on a journey to distant lands and exciting flavors. In addition, Chef Laffan has participated in international food festivals such as Obsession UK Peixe em Lisboa and Rota das estrelas Portugal.

6. Chef Christian & Manuel Costardi (1-Michelin Star) from Ristorante Christian e Manuel, Italy.

Christian and Manuel Costardi, two brothers born into a family of hoteliers in Piedmont, were destined to become chefs. Christian, the elder brother by nine years, developed a passion for cooking at a young age and enrolled in culinary school at the age of 14. He quickly rose through the ranks, becoming the second chef at the Regina Hotel in Venice at the age of 21. Manuel, the younger brother, honed his skills under Chef Sergio Mei at the Four Seasons Hotel in Milan. The brothers then returned to their grandparents' hotel, CINZIA, with the ambition of blending tradition with innovation. There, they elevated rice, the region's most celebrated ingredient, to center stage. They created over 22 award-winning risotto dishes, seamlessly fusing classic Italian flavors with modern culinary techniques. In 2009, they were awarded a Michelin star, followed by international invitations, accolades, and appearances as judges on TopChef Italy. They have also served as ambassadors for Italy at culinary events and festivals, including World Week in Chile and the Melbourne Food and Wine Festival.

Chef Jason Tan, co-owner of the acclaimed EJH Corner House in Singapore, has had a meteoric rise to culinary stardom. He began his career at the renowned Les Amis in Singapore and Robuchon a Galera (later renamed Robuchon au dome) at the Hotel Lisboa Macau, which held a prestigious 3 Michelin star rating. Chef Tan honed his skills and was appointed Executive Chef at "Sky on 57" at Marina Bay Sands at the young age of 30. In 2008, Chef Tan earned the title of Bocuse d'Or Champion in Singapore and was awarded the bronze medal at the Bocuse d'Or Asian Selection. He represented Asia at the Bocuse d'Or world finals held in Lyon, France. Chef Tan is passionate about environmentally friendly ingredients and has co-developed a contemporary cuisine called Gastro-Botanica, which showcases high-quality vegetables, seafood, and meat. Chef Tan frequently travels to explore new food cultures, which he draws inspiration from for his EJH Corner House, which has been awarded a 1 Michelin star and ranked 23rd best restaurant in Asia by Asia's 50 Best Restaurants.

8. Chef Anatoly Kazakov from SELFIE Restaurant, Russia.

Anatoly Kazakov, a Russian chef, attributes his culinary passion to his mother's hard work, which necessitated him to cook for himself at the young age of 14. Driven by a desire to refine his skills, he pursued professional culinary training. His first month's salary, earned in 1993, was invested in a then-expensive mobile phone, equivalent to his entire earnings. Kazakov's culinary philosophy emphasizes an unconventional approach to ordinary ingredients and a commitment to sustainable practices, including growing produce for his restaurant. He prioritizes ingredients from his native Russia. This talented chef has garnered international acclaim and currently serves as the chef of Moscow's SELFIE restaurant, collaborating with renowned chef Vladimir Mukhin.

9. Chef Jock Zonfrillo of ORANA Restaurant, Australia.

Chef Jock Zonfrillo hails from a Scottish-Italian heritage, but considers Australia his home and holds a special connection to Aboriginal culture, which heavily influences his work. Zonfrillo has honed his skills under renowned chefs like Marco Pierre White, working in London and Sydney before opening his own restaurant on the picturesque Cornish coast of England. Returning to Australia in 2000, Zonfrillo took the helm as head chef at Restaurant 41, where he delved into Aboriginal culture, philosophy, and culinary traditions. After relocating to Adelaide, he opened two more restaurants, Orana and Blackwood. Zonfrillo was tapped to host "Nomad Chef" on the Discovery Channel, showcasing the food and culture of remote communities worldwide, aligning with his ethos. His career achievements underscore his commitment to preserving and evolving Australia's culinary culture, while supporting local businesses through his non-profit Orana Foundation.

10. Chef Bobby Chinn (Vietnam)

Bobby Chinn, a Chinese-Egyptian chef born in New Zealand and educated in England, worked in the United States before traveling the world to gain experience. He settled in Vietnam in 1996. Chinn honed his culinary skills while seeking authentic flavors from around the globe. He is now recognized as a modern global food expert. He opened Restaurant Bobby Chinn in Hanoi in 2001 and Bobby Chinn Saigon in Ho Chi Minh City in 2011. Both restaurants received numerous awards before closing. In 2014, he opened The House of Ho in London, a modern Vietnamese restaurant. Chinn has also served as a Sustainable Seafood Production ambassador for the World Wildlife Fund since 2012 and was appointed Vietnam's tourism ambassador to Europe in July 2014.

The 18th World Gourmet Festival is organized and supervised by Anantara Siam Bangkok Hotel, led by Executive Chef Jan Van Dyk, in collaboration with Chef Satoshi Sawada of Shintaro Japanese Restaurant, Chef Nico Merten of Madison Steakhouse, Chef Warinthorn Samritphol of Spice Market Thai Restaurant, and the chef team of Biscotti Italian Restaurant. Each guest chef will host two dinners in one of the hotel's restaurants and create special dishes for the World Gourmet Brunch, the most popular and spectacular event. On that day, we can enjoy a musical performance by Chef Bobby Chin and friends, which will take place on Sunday, September 10, 2017 (the last day of the festival). There are also many other special events, such as the introduction of fragrances paired with special dishes served with wine and a fashion show to enhance the dining experience (Fragrance & Fashion), a premium champagne tasting experience (Champagne Journey), and Blue Friday Night. In addition, proceeds from the sale of dinner tickets at 600 baht per ticket and all proceeds from the auction of prizes will be donated to the Queen Saovabha Memorial Institute Fund to help reduce AIDS infection, Thai Red Cross Society.
